Barley Veggie Soup
Kick-start a healthy new you with this Barley Veggie Soup recipe inspired by my travels around the world. Lentils are an excellent source of B vitamins, iron, magnesium, potassium, and zinc. They’re also a great source of plant-based protein and fibre. The herbs add a beautiful depth of flavour while the carrots, zucchini, tomatoes, and celery a vibrant colour. Hearty, flavourful, perfect for weeknight dinner or weekend company!

Add a hearty dose of freshly grated Parmesan cheese or a small drizzle of soured cream. For some extra variety, add diced bell pepper, avocado, cilantro, tortilla strips, and a lime wedge on the side.
